About The Company
Big Mamma is an Italian restaurant group founded in 2013 by Tigrane Seydoux and Victor Lugger.
Our wish is to share the authenticity and warmth of traditional Italian trattorias abroad. All produce is directly sourced from small Italian producers, dishes are 100% homemade, served at affordable prices, in beautifully designed spaces, and with a big smile.
Italian cuisine is about the quality of the ingredients, so we’ve partnered with small producers - Prosciutto di Parma from Stefano Borchini, San Marzano tomatoes from Paolo Ruggiero, flour from Antimo Caputo, to say the least!
We are currently a team 2.200 employees and the family is still growing, with new openings coming up in 2025 across Europe.

About the Role
<h2><strong>Food Safety & Quality Intern</strong></h2><p><em>Based in Madrid – Travel required within Spain and Germany </em><strong>Role Overview</strong></p><p>You will support the <strong>Quality Manager</strong> in ensuring <strong>food safety and hygiene compliance</strong> across our restaurants in <strong>Spain and Germany</strong>.<br>The role also offers exposure to <strong>cross-functional projects</strong>, especially those linked to <strong>environmental and sustainability topics</strong>.</p><hr><h2><strong>Main Missions</strong></h2><h3><strong>1. Hygiene Audits</strong></h3><ul><li><p>Conduct on-site visits to restaurants to:</p><ul><li><p>Observe hygiene practices, equipment, and work environments</p></li><li><p>Interact with teams to identify site-specific risks</p></li></ul></li><li><p>Perform <strong>risk analysis</strong> (chemical, physical, microbiological, etc.) following defined methodologies</p></li><li><p>Draft and update <strong>audit reports</strong></p></li></ul><h3><strong>2. KPI Monitoring & Reporting</strong></h3><ul><li><p>Monitor and analyze <strong>key performance indicators (KPIs)</strong> related to food safety and hygiene</p></li><li><p>Prepare, summarize, and share <strong>analysis reports</strong> with relevant stakeholders</p></li></ul><hr><h3><strong>3. Restaurant Support</strong></h3><ul><li><p>Support restaurants in implementing <strong>corrective action plans</strong> after audits</p></li><li><p>Draft <strong>food hygiene documentation and signage</strong></p></li><li><p>Deliver <strong>training sessions</strong> on good hygiene practices to restaurant teams</p></li></ul><blockquote><p><em>This list of responsibilities is not exhaustive and may evolve according to business needs.</em></p></blockquote><hr><h2><strong>Required Profile</strong></h2><p>Currently studying <strong>Food Safety, Food Hygiene</strong>, or a related field<br><em>(Internship required as part of your degree)</em></p><p>Curious, rigorous, well-organized, and comfortable with both <strong>fieldwork and communication</strong></p><p>Solid knowledge of <strong>food safety regulations, hygiene standards, and H&S</strong></p><p>Good command of <strong>Office tools</strong> (Excel, Word, etc.)</p><hr><h2><strong>Languages</strong></h2><p><strong>English</strong>: required (high level)</p><p><strong>Spanish</strong>: strong working proficiency</p><p><strong>Italian</strong>: plus</p><div><p></p><p>Necesidad de convenio escolar -- salario por convenio</p><p>Disponibilidad inmediata </p><p>Based in Madrid <br></p></div>
