Today, Dragsholm Castle is open to the public as a hotel with 34 double rooms, two acclaimed restaurants, as an events, courses and conference centre and a church for weddings and services. Our ambition remains to welcome our guests with a total experience. The art is to preserve and convey the historical authenticity and the character of the region, while also bringing the castle and its cultural history into the 21st century's functionality and aesthetic. In its 800 year-old castle the past, present and future converge in a harmonious interplay between history, local produce and gastronomy. And this must be both seen and tasted. The castle's two recognised and prize-winning restaurants are based on changing menus using the season's ingredients from the Baron's reclaimed Lammefjord. The surrounding countryside has been designated as Denmark's first and only Geopark by UNESCO and offers plenty of activities. Dragsholm Castle's exciting history can be experienced in a guided tour, and the castle's 34 hotel rooms are decorated with Hästens beds, so guests can get a well-deserved good night's sleep.
About the Role
<p>At Dragsholm Castle, we are looking for a <strong>Stagiaire (Chef)</strong> as part of your culinary education. This internship is designed for students who want hands-on experience in a professional kitchen where quality, craftsmanship and teamwork matter.</p><p>This is not about standing in the corner watching – it’s about learning by doing, supported by experienced chefs in a historic and ambitious culinary environment.</p><h3>What will you be part of?</h3><p>As a Stagiaire Chef, you will be part of the daily kitchen operations and gain insight into both craftsmanship and structure in a professional kitchen.</p><p>Your tasks may include:</p><ul><li><p>Assisting in daily food preparation and service</p></li><li><p>Working with fresh, seasonal and high-quality ingredients</p></li><li><p>Learning kitchen routines, mise en place and service flow</p></li><li><p>Supporting different kitchen sections under guidance</p></li><li><p>Following food safety, hygiene and quality standards</p></li><li><p>Being part of service, collaboration and kitchen culture</p></li></ul><p>Your responsibilities will grow as your skills and confidence develop.</p><h3>Who are you?</h3><p>This internship is part of a culinary education or chef training programme.</p><p>We imagine that you:</p><ul><li><p>Are currently enrolled in a chef or culinary education and need an internship as part of your studies</p></li><li><p>Have a genuine interest in food, craftsmanship and learning</p></li><li><p>Are motivated, reliable and open to feedback</p></li><li><p>Enjoy working in a team and in a fast-paced environment</p></li><li><p>Are curious and willing to take responsibility over time</p></li></ul><p>Previous kitchen experience is a plus, but not a requirement.</p><h3>Why Dragsholm Castle?</h3><p>Dragsholm Castle is a place where history, nature and gastronomy meet.
